Qutu Mikhuy

Food Design / Pratt Institute

Qutu Mikhuy (Quechua for “Stacking Food”) combines Pre-Hispanic design principles, such as architectural forms and traditional construction techniques, with the playful stacking concept of the Jenga game. This edible project transforms yuca (cassava) into stackable, colorful “food blocks” using custom-designed molds that emulate ancient adobe brick-making techniques.

The design of the blocks is inspired by Andean symbolism, specifically the concept of the “three steps,” representing the “upper world” (Hanan Pacha), the “middle world” (Kay Pacha), and the “lower world” (Uku Pacha). These steps symbolize the spiritual realm, the human realm, and the underworld, reflecting a division of the cosmos into three interconnected planes.

These edible blocks create a bridge between cultural heritage, modern design, and flavor. They offer a unique, interactive dining experience that encourages communal engagement through food. The blocks’ varying shapes and flavor profiles—earthy (spinach), golden and aromatic (turmeric), and spicy (beet and chili)—add versatility and excitement to any table.
